Homemade KFC style Chicken


Ever went and had KFC chicken and felt like finger licking good? Heard a lot about it but I have never gone to KFC but the feedback I got about the Chicken there tempted me to learn it. Its a very simple recipe plus I have put some of my ideas because I love spicy food (only difference is I have marinated chicken for some hours, if you find that difficult then without marination also one can make it! But as I don't like plain chicken taste from inside I always prefer to marinate it before with spices! I like to spice up everything lol, okay jokes apart here goes the recipe!



Ingredients :
  • Chicken boneless- 4 pc 
  • Egg-1 
  • Maida/ All purpose flour-1 cup
  • Black pepper powder-2 tsp
  • Salt-1 tsp
  • Milk-5tsp
  • Salt-(1/2 tsp)

Ingredients for marination:
  • Ginger-1 small pc
  • Garlic-6-7 cloves
  • Green chilli-3 no
  • Redchilli powder-1/2 tsp
  • Turmeric powder-1/2tsp
  • Garam/Chicken masala-1 tsp
  • Salt-1tsp
Step 1 : Take Chicken in a bowl, make ginger, garlic and green chilli paste and add it with chicken, then add, redchilli powder,turmeric powder,Chicken masala,salt and mix all well and keep atleast 4 hour for marination!( I marinated and kept in freezer for almost a day!)

Step 2 Now put egg in a bowl and add milk in it and keep it aside!

Step 3: Take another bowl and add maida,salt and black pepper and mix it properly!

Step 4 : Take a pan and add enough oil for deep fry, then take one pc of marinated chicken , dip it in egg/milk solution and then put in maida/salt/pepper mixture we made and again dip in egg/milk solution and then again in maida mixture and then deep fry it. Itnitally keep the flame high for 1 min then cook is low flame for 7-8 min!

Step 5 : You hot and crispy Kfc style chicken is ready! Enjoy..

Note- You can make this without marination as well.

Erissery


As onam is coming soon,so thought of covering some of the items which are prepared during onam. Onam is the festival celebrated in Kerala. The feast which is known as onam sadhya is served on plantain leaves and consists of about 26 dishes,can you imagine that?, okay am learning few of its dishes and hoping to learn many more! So here I present one of the onam dishes Errisery! Here goes the recipe.

Ingredients :
  • Red cow peas- 1 cup
  • Pumpkin-250 gm
  • Red chilli powder-1/2 tsp
  • Black pepper powder-1 tsp
  • Turmeric powder-1 tsp
  • Salt- As per taste
  Ingredients for coconut paste :
  • Coconut-1/2
  • Jeera-1tsp
  • Garlic-4-5 cloves
 Ingredients for tempering :
  • Coconut-1/2
  • Mustard seed-1tsp
  • Curry leaves-5-7 no
  • Dry red chillis-3 no
  • Oil-6 tsp

Step 1 : Soak cow peas for 4 hours and then pressure cook with salt . Drain and keep them aside.

Step 2: Cut pumpkin in cubes. Now take a pan and add pumpkin, some water,red chilli powder, turmeric powder, black pepper powder and salt and close the pan and allow it to boil and cook properly till it is fully soft. Now add cooked cow peas .Now grind the ingredients for Coconut paste.(See the above ingredient to make coconut paste) and add them and allow it to come to boil.

Step 3: Now for tempering, add 4tsp oil in another pan and fry coconut paste(no need to make very soft paste, grind it without water) and allow it to turn golden in color, now make space in between the fried coconut and put 2 tsp oil in between and add mustard seed, curry leaves and dry red chilli and fry it for 2 min, then pour this whole tempering mixture into the pumpkin erissery

Step 4 : Mix it well and your errisary is ready to be served!

Note- If pumpkin is not sweet then we can add a small of piece jaggery while cooking pumpkin.

Egg Roast


There are many ways to make Egg curry and this is one of them, first we have to roast all ingredients and then add egg in it. When we have less time and want to prepare something yummy this is one easy recipe to go for, also this goes with rice, roti, paratha! So here goes the recipe.

Ingredients :

  • Onions-3-4 no
  • Tomato-2 no
  • Ginger-1 small pc
  • Garlic-7-8 cloves
  • Oil
  • Mustard seed-1/2 tsp
  • Red chilli powder-1/2 tsp
  • Coriander powder-1 tsp
  • Turmeric powder-1 tsp
  • Salt- As per taste
  • Garam masala-1tsp
  • Tomato sauce-3 tsp
  • Soy sauce-1 tsp
  • Boiled Eggs-2 no 
  • Coriander leaves
Step 1 : Cut onions, Ginger, garlic, green chilli and tomatoes in slim long slices.

Step 2: Now add some oil in the pan and add mustard seeds and allow it to crackle. Now add ginger and garlic slices and fry till it turn little golden in color.

Step 3: Now add onions and little salt and fry till it is light golden color, now add red chilli powder, turmeric powder,coriander powder, Garam masala and salt, now mix everything properly, now add tomato slices and mix well

Step 4: Time to add tomato sauce and Soy sauce and mix properly, now add boiled eggs and mix. Now garnish with coriander leaves!

Step 5 : Your egg roast is ready!

Samosa


This is one of the famous road side snacks, here I am going show you how easy this recipe is though it looks difficult.So here goes the recipe!

Ingredients for making dough :
  • Maida-2.5 cup
  • Ghee-4tsp
  • Salt
  • Water
Ingredients for making samosa fillings :
  • Boiled Potato-4 no
  • Boiled Green peas-handful
  • Red chilli powder-1tsp
  • Turmeric powder-1/2 tsp
  • Coriander powder-1 tsp
  • Garam Masala-1 tsp
  • Coriander seed-1tsp
  • Amchur powder-1 tsp
  • Ghee- 2tsp
  • Coriander leaves- 1tsp
  • Jeera-1/2 tsp
  • Ginger-1 small piece
  • Onion-1 no
  • Salt
  • Oil-For deep fry

Step 1 : Make a thick dough putting maida, ghee, salt and water(put less water to make thick dough). Now keep it for 30 min.

Step 2:Now heat a pan and add ghee, then add jeera and fry it for sometime then add ginger paste fry till it become golder in color then add onion and again fry it till it becomes golden in color, now add red chilli powder,turmeric powder,salt,garam masala,coriander powder,heated and crushed coriander seeds,amchur power and mix it well, now add potatoes and green peas and coriander leaves, after mixing everything properly close the flame.

Step 3: Now make the dough in oval shape roti and cut from between. Now take one side and roll it in triangle and use water as glue to make the corner stick properly, now fill it with samosa filling and again close it using water as glue and press the extra dough standing above the triangle in one side shown in the above picture.

Step 4: Now deep fry it in low flame and allow it to cook properly.

Step 5 : Hot Samosas are ready to be served!

Idli


You must have seen Idli's been frequently prepared in a south Indian house, as I come from a south Indian background, this was one of my favorite breakfast but during childhood days I used to feel as if this was a difficult dish to prepare but after marriage when I properly  learnt I realized that this is such an easy recipe and can be cooked frequently. Fresh soft Idils tastes great with coconut chutney and sambhar(I love it with chutney though), so here goes the recipe.

Ingredients :

  • Idli Rice-2 cup
  • Urad - 1cup
  • Cooked Rice-1cup
  • Water-half cup
Step 1 : Soak Idli Rice and Urad in separate bowl for 6-7 hours. 

Step 2:Now grid both Idli rice and Urad in fine paste (put half cup water when grinding) and also grind cooked rice and mix all the paste in one big bowl and keep it for 6-7 hours.

Step 3: Now grease the Idli mould and put the paste in the mould, now put some water in cooker and keep the idli mould in the cooker and close it without putting the whistle.

Step 4: Now cook it in high flame for 5 min and 10 min in low flame, now open the cooker and remove the idli mound and let it cool down little so the idli come out smoothly. 

Step 5 : Your fresh and soft idli's are ready to be served with coconut chutney or sambar! Isn't it an easy recipe? Go for it and enjoy!

Veggie Upma


Today I thought of going healthy though I hardly prefer that! Mostly I have posted those recipes which is tasty and high in calories so here I brought something for those who is looking for healthy food, also when I used to go  to gym (before marriage) my trainer told me to have upma and oats as breakfast and to quit eating rotis in the morning so thought of making it with veggies to make it more nutritious! So here goes the recipe.

Ingredients :
  • Roasted Sooji(Rava) -2 tea cup
  • Mustard Seeds-1 tsp
  • Urad - 1 tsp
  • Onion-1 no
  • Tomato-1 no
  • Carrot-1 no
  • Capsicum-1/2 
  • Boiled Peas-handful
  • Green chilli-3 no
  • Ginger-1 small piece
  • Curry leaves-7-8no
  • Coriander leaves- 2tsp
  • Water-2-3 cups
  • Oil-For deep fry
  • Salt(As per taste)
Step 1 : Add oil in the pan and first add mustard and allow it to crackle and then add urad dal and add curry leaves(be careful that it don't go in your eyes, I am always scared while putting curry leaves ) then add ginger paste and allow it it turn light golden!


Step 2: Now add Onions and green chilli and fry a little and then add carrot, capsicum and boiled peas and fry it for some time, now put tomatoes and little salt.


Step 3: Mix them properly and after 2 min add 2 cups water and when the water is boiled properly then comes the time to add roasted Rava(Sooji) and salt as per taste.


Step 4: Now cook till the water is dried and yes stir it till the water is all gone.(you can add lemon juice if you like sour taste along with roasted rava in the pan)


Step 5 : Now garnish it with coriander leaves and your nutrious Upma is ready to be served!


You can also make oats in the same way and stay healthy.

Parippu Vada


If you have some craving for crispy food then parippu vada is your solution! And best part is that it is very easy to cook, and tastes great when served hot. Some food tastes great only when it is served hot and this is one of them! So here goes the recipe.

Ingredients :

  • Chana Dal (Split Bengal gram)-300-400gm
  • Onion-2 no
  • Green chilli-4no
  • Red dry chilli-2 no
  • Ginger-1 small piece
  • Curry leaves-7-8 leaves
  • Oil-For deep fry
  • Salt(As per taste)
Step 1 : Soak Chana dal(kadala parippu) for 2 hours then grind it and make paste,paste should not be smooth but some dal should be seen.


Step 2: Now add small sliced onions,green chilli, red dry chilli, ginger paste,curry leaves,salt and mix it properly.


Step 3: Now heat oil for deep frying then make round shape of this paste and press it to give flat round shape by keeping them between the palm of your hand.


Step 4:Fry it till the vada turn lil light golden in color.


Step 5 : Your crispy Parippu vada is ready to  be served. You can have it alone but I love it with hot tea!

Also, the garlic lovers can also add garlic paste in the mixture because I have met people who love garlic a lot and yes I am one of them !

Uzhunnu Vada


This is one of the south Indian delicacy and can be seen in most of all eatery shops in Kerala. This snack is crispy from outside and soft from inside and tastes great when served with coconut chutney and sambar. So here goes the recipe.

Ingredients :
  • Uzhunnu-300-400gm
  • Rice powder-2 tsp
  • Black pepper-5-10 no
  • Onion-2 no
  • Green chilli-4no
  • Ginger-1 small piece
  • Curry leaves-7-8 leaves
  • Oil-For deep fry
  • Salt(As per taste)
Step 1 : Soak Uzhunnu for 2 hours then grind it and make paste, if required put 2-3 tsp of water when grinding.Make a smooth paste.Now keep the paste for 3-4 hours for fermentation.


Step 2: Now add small sliced onions,green chilli, ginger paste,curry leaves,salt and mix it properly.Now crush black pepper and add in the mixture.


Step 3: Now heat oil for deep frying, meanwhile take some water in a bowl. Now spread some water in the palm of your hand and put the paste in the hand and again putting index finger in water make a small hole in between and put it in the oil slowly.


Step 4:Fry it till the vada turn lil light golden in color.


Step 5 : Your soft and crispy Uzhunnu vada is ready to  be served with coconut chutney or sambar!

French Fries


 Ever went to Mcdonald and did not buy French fries? Never happened ? Right? Yes..this is one of my favorite snacks and who doesn’t like French fries..This is such a simple recipe yet we end paying so much when eating from outside. So here goes the recipe.

Ingredients :
  • Potato-4 no
  • Oil-For deep fry
  • Salt(As per taste)
Step 1 : Remove the skin of potato and slice in the shape of french fries.


Step 2: Boil water and add salt then put this slices of potatoes and cook 75% and take out and strain it. Now remove the little left out water on potatoes with the help of a cloth.


Step 3: Now store this potatoes in a zip lock bag and store in the freezer atleast for 3-4 hours.


Step 4:Take out the the stored packet and fry those friezed potatoes in high flame.


Step 5 : Your hot and crispy French fries is ready to  be served

Chole


Chole bhature is one of the most popular punjabi dish. For me, if someone is coming home in the morning then this is one dish in my menu list. It can be best served with Roti, puri, bathure but we can have it with rice too.(personal choice). So here goes the recipe!

Ingredients :
  • White Chickpeas
  • Onions-3 no.
  • Tomato- 3-5no
  • Coriander leaf- Handful
  • Ginger-1 big piece
  • Garlic- 1 no
  • Green Chilli-3-4 no
  • Oil-5tsp
  • Bay leaves-1 no
  • Turmeric powder-1 tsp
  • Red chilli powder-tsp
  • Garam Masala
  • Salt(As per taste)
  • Fresh cream-2tsp
Step 1 : Soak White chickpeas overnight. Next day cook in pressure cooker giving 5-6 whistle.

Step 2: Put 2 tsp oil in the pan and add ginger garlic paste, fry till it turn lil brown then add onions and green chilli , after frying it for 5 min , add turmeric, red chilli, garam masala and salt. Turn off the gas and wait till it gets cold.

Step 3: Now grind the above onion gravy and keep it aside and then grind tomatas and make tomato puree.


Step 4:Now remove the cooked chickpe as from cooker and put 3 tsp oil in the cooker and then add bay leaves  then tomato puree and salt and stir it for 3 min. Then add the onion gravy and cooked cheak peas and mix it properly. Check the taste and if more salt required then add here.


Step 5 : Now close the cooker and allow it to whisle 3-4 time. Then when you open the cooker you can add 2tsp of Amul cream(optional) in it.


Step 6: Garnish it with coriander leaves and serve it hot with Bhature or puri or roti..


You can put few cashew nuts while when you grind onions mixture(this is optional without this also it will taste great!)

Chicken dum biryani



When I used to go for an event and when Chicken Biryani is served there, I always used to wonder how difficult it is to make it so I always wanted to learn it, so finally after trying two three styles of chicken Biryani and finally I got this Dum Chicken Biryani and I loved it. Its a simple recipe. Here goes the step by step recipe below:

Ingredients :
  • Chicken(800gm)
  • Onions-8-9 no.
  • Tomato- 4-5no
  • Coriander leaf- Handful
  • Mint leaf- Handful
  • Ginger-1 big piece
  • Garlic- 2 no
  • Green Chilli-7-8 no
  • Turmeric powder-1 tsp
  • Red chilli powder-tsp (As per your taste if you like you can add more)
  • Chicken Masala/Biryani Masala-3-4 tsp
  • Black pepper powder-1stp
  • Fennel seed powder-1tsp
  • Salt(As per taste)
  • Ghee-3tsp
  • Curd- 1 tea cup
Garnishing Ingredients:
  1. Coriander leaves
  2. Fried onions
  3. Fried dry fruits-Cashew nuts and Raisins
  4. Few Pineapple piece
Step 1 : Wash chicken and rinse it properly and put it in a bowl.

Step 2: Now add ginger garlic and green chilli paste and mix it well then add turmeric powder,red chilli powder,chicken or biryani masala,black pepper powder,fennel powder and salt as per paste (Note: I used Chicken Masala, it worked well for me). Mix all properly.

Step 3: Add ghee and mix well then add curd ,mint and coriander leaves and mix them too in the bowl.

Step 4:Now deep fry around 8-9 onions till it turns dark brown. Put half the deep fried onions in the bowl and keep other half to be used later.

Step 5 : Now finally add tomatoes in the bowl. Now mix all the ingredients properly and keep at least 3-4hours to marinate otherwise it won’t taste great.

Step 6: After 4 hours put some ghee in the cooker and add the marinated Chicken in cooker.

Step 7:Now boil basmati rice and when basmati is half cooked , then rinse and remove half of the rice and put in the cooker and then put garnishing ingredient-(See Above)

Step 8: Again put now fully cooked rice and then put those garnishing ingredient.

Step 9: Now make Flour dough and paste the dough around the cooker and close it tightly with a flat surface and put some weight above so that steam should not go. 

Step 10: Now cook in high flame for 4-5 min and then keep for 20 min in low flame and then turn off the flame.

Step 11:  Tada! Your Dum Biryani is ready. Open it after it cools down a little and serve it hot with curd!
