When I used to go for an event and when Chicken Biryani is served there, I always used to wonder how difficult it is to make it so I always wanted to learn it, so finally after trying two three styles of chicken Biryani and finally I got this Dum Chicken Biryani and I loved it. Its a simple recipe. Here goes the step by step recipe below:
- Chicken(800gm)
- Onions-8-9 no.
- Tomato- 4-5no
- Coriander leaf- Handful
- Mint leaf- Handful
- Ginger-1 big piece
- Garlic- 2 no
- Green Chilli-7-8 no
- Turmeric powder-1 tsp
- Red chilli powder-tsp (As per your taste if you like you can add more)
- Chicken Masala/Biryani Masala-3-4 tsp
- Black pepper powder-1stp
- Fennel seed powder-1tsp
- Salt(As per taste)
- Ghee-3tsp
- Curd- 1 tea cup
- Coriander leaves
- Fried onions
- Fried dry fruits-Cashew nuts and Raisins
- Few Pineapple piece
Step 2: Now add ginger garlic and green chilli paste and mix it well then add turmeric powder,red chilli powder,chicken or biryani masala,black pepper powder,fennel powder and salt as per paste (Note: I used Chicken Masala, it worked well for me). Mix all properly.
Step 3: Add ghee and mix well then add curd ,mint and coriander leaves and mix them too in the bowl.
Step 4:Now deep fry around 8-9 onions till it turns dark brown. Put half the deep fried onions in the bowl and keep other half to be used later.
Step 5 : Now finally add tomatoes in the bowl. Now mix all the ingredients properly and keep at least 3-4hours to marinate otherwise it won’t taste great.
Step 6: After 4 hours put some ghee in the cooker and add the marinated Chicken in cooker.
Step 7:Now boil basmati rice and when basmati is half cooked , then rinse and remove half of the rice and put in the cooker and then put garnishing ingredient-(See Above)
Step 8: Again put now fully cooked rice and then put those garnishing ingredient.
Step 9: Now make Flour dough and paste the dough around the cooker and close it tightly with a flat surface and put some weight above so that steam should not go.
Step 10: Now cook in high flame for 4-5 min and then keep for 20 min in low flame and then turn off the flame.
Step 11: Tada! Your Dum Biryani is ready. Open it after it cools down a little and serve it hot with curd!
