Black Chickpeas recipe

Black Chickpeas also known as kala chana is widely used in Indian cuisine to make curries. This goes well with rice, roti/other bread and with Puttu( popular steamed rice cake recipe from the rich kerala cuisine or south Indian cuisine.) In Kerala, puttu is typically served for morning breakfast and is generally served with black chickpeas(kadala curry) and bananas.


Ingredients

  • 3 tablespoons oil
  • 1 bay leaf
  • 2 medium onions, chopped
  • 8 garlic cloves, minced
  • 2-inch ginger, minced
  • 1-sliced green chilli
  • Salt
  • 2 teaspoon Kashmiri chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 3 teaspoons coriander powder
  • 2 cups of black chickpeas
  • 3 tomatoes. 
  • Curry leaves -5-6
  • Whole red chilli-2

Instructions


Wash the black chana and soak in enough water for 6-8 hours. Drain the water and add the chana in a pressure cooker along with 2 cups of water and 2 tsp salt. Pressure cook until chana is nicely cooked. (Cook it for one whistle on high heat and then 3-4whistles on low heat).

Heat a pan and add oil . Once hot, add whole red chilli, bay and curry leaves and then add the onions and sauté for 5-6 minutes, or until lightly golden. Add garlic, ginger, whole green chili, sauté for about 5 minute. Now add coriander powder,turmeric powder, Kashmiri chili powder,Garam masala, salt and sauté for another minute.  Add the tomato paste and close the pan and allow it  to cook for 10 min. Now add the boiled chickpeas and boil it for 3 min.   Your kala chana is ready to be served! Hope you will try and enjoy with your family.

Chicken Kadai

Kadai chicken, is undoubtedly one of the most popular curries in India. It’s a simple, spicy dish and is traditionally made in a kadai, but we can make in any pan.When you eat out at an Indian restaurant, chances are that they’ll have Kadai Chicken on the menu.

Typically, curries with lots of gravy go well with both rice and roti, and curries with minimal gravy go well with roti. Since chicken kadai is a ‘semi dry curry, it goes well with Tandoori naan, roti/other bread and rice.


Ingredients

  • 1 teaspoon black pepper
  • 2 teaspoons coriander powder
  • 1 teaspoons cumin seeds
  • 3 tablespoons oil
  • 1 bay leaf
  • 2 medium onions, chopped
  • 8 garlic cloves, minced
  • 2-inch ginger, minced
  • 1-sliced green chilli
  • Salt
  • 1 teaspoon Kashmiri chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chicken masala
  • 500gm chicken
  • 2 tomatoes.
  • Handful Coriender leaves 
  • 10 Mint leaves




Instructions

Heat a large, heavy-bottomed pan over high heat(Kadai), and add oil . Once hot, add the onions and sauté for 5-6 minutes, or until lightly golden. Add garlic, ginger, whole green chili pepper, coriender leaves and mint leaves and sauté for about 5 minute.
Add the chicken and ½ tsp salt and sauté for 5 minutes, or until the color of the chicken changes and it has stopped releasing water. Add the whole 2 tomatoes and let it cook for 10 min, then remove the tomato skin as it will be easily removed after  10 min. of cooking and then smash the tomatoes.
Now add coriander,turmeric, cumin, Kashmiri chili powder,Garam masala, Chicken masala, black pepper and remaining salt and sauté for another minute.
Lower the heat to medium, cover, and allow the chicken cook for 20 minutes, stirring once in between.

 Your Chicken Kadai is ready to be served! Enjoy it with your family.

Pistachio Ice-cream!

Honestly, never thought I will end up making an ice cream, but sometimes good things just happens!

After my husband's birthday got over, I had some milk cream left over and we all know that once we open the milk cream packet we are suppose to use it in 2 days.One day passed away and the pressure mounted up to use it up, so finally this ice cream thing came up. So make and enjoy this cool ice cream in this hot summer with your family!

Ingredients:

2 cup milk cream (Amul milk cream)
1/2 cup milk
1/2 tsp. ground cinnamon
20pc chopped/grinded pistachios.
1 cup Sugar powder
 
Directions:
 
1. In a large bowl using a electric mixer or whisk, beat cream until stiff peaks form, 15 minutes. Also, mix sugar in between while whisking.
 
2. Mix milk,cinnamon powder and 3 spoon sugar, boil it and keep aside till it cools down.(instead of milk, we can use condensed milk-1 can, if using condensed milk you can mix it directly to the cream)

3 Mix this milk in the thick cream.

4. Then mix pistachios and put the bowl in the freezer for 4 hours. And your Pistachio Ice cream is ready!
